I have been preparing this recipe since the 1970’s. Everyone who has eaten it has loved it, including meat eaters. Surround it with any of your favorite side dishes and enjoy!
Carrot Loaf
2 cups grated carrots
1 1/2 cups toasted breadcrumbs
1/2 cup chopped walnuts
1 cup diced onion
3 eggs, beaten or Egg Replacer to equal 3 eggs if vegan
3/4 teaspoon salt
1 teaspoon sage
2 tablespoons vegetable oil
Lightly toss carrots, breadcrumbs, walnuts and onions in a bowl.
Add eggs(or substitute) salt, sage and oil. Mix together.
Pour into greased loaf pan.
Bake 30-45 minutes. Serves 6.
